Take whatever you want to take. I don't know about JHU, but at Berk, Korean and Japanese were fun classes. Not too much work. Chinese, however, dun dun duuuuun.
If you take Chinese, you'll definitely test into the higher levels. You'll be placed either with fobs or upperclassmen who've gone through the previous levels.
I definitely encourage you to take a language (or two or three) while you're in undergrad. Sit in on the first day and see how you like it.
